GRANDPA PANCAKES!!

Ok, I am sure you are all thinking "What the heck are Grandpa pancakes??!!" Well, let me give you a bit of a back story ... my Grandpa was from Oklahoma and was the sweetest most kind man you'd ever meet. He was also VERY simple and loved making breakfast for us as kids. This was one of our favorites, there really is no reason to call them Grandpa pancakes other than the fact that he always made them for us :) He passed away from Colon Cancer about 15 years ago and I LOVE making these pancakes for Bucket and it helps me to remember Grandpa. So, now that I'm a boobing mess ... let's get to the recipe. It is SOOOO cheap and takes 5 minutes, the kids will LOVE them and you may even as well!!

Start with these ... sounds weird I know, but stay with me ... The pack of 4 is less than $2.00 at Wal-Mart and I think each tube makes 10.

I use my griddle, at 300 degrees, so I can make all 10 at once ... BUT, I have also used a plain old frying pan, medium heat, when I only want to make a few. And any unused biscuits can be put in a ziploc bag and used within the next few days. Smash each biscuit flat in between your hands before you put them on the griddle.

Spray the back of a spatula with Pam ...

Using the spatula, flatten each "pancake". The pam will help keep them from sticking to the spatula.

Cook on each side for 1-2 minutes until Golden brown. They may try to puff up a bit, just keep flattening them down.

Now you are all done!! Top them off the same way you would normal pancakes and ENJOY!! I've never made these for a kid that didn't LOVE them ... so try it out on your little ones, and let me know what they think. And make sure to try them too, you may be surprised!!
